It spent seven days on skins in the open fermenter and was lovingly treated in 100 per cent French barrels. The aim was to produce an elegant and complex example of cool climate shiraz. It sings and will age beautifully. Matured for almost 2 years in French hogsheads (40% new). It flows evenly and without hurry along toasty oak without a breath of alcohol heat, the cedary aromas and flavours of the
