The addition of the high alcohol Cognac spirit interrupts the start of fermentation and maintains the natural sugar of the grapes. The aging takes place in French oak barrels (roux and old) for much longer than the minimum required by the denomination which is 7 years to obtain the mention Vieux with a very gentle filtration
